Courgetti, Bacon and Tomato

Everybody is talking about Courgetti, or a spiralizer, but courgettes seems to be the only thing people use them for. With a low carb week about to start we tried some Courgetti to see what the fuss was about. We ended up going a tad over board and didn't really need up too healthy, but tasted great!

3 courgettes, spiralizer of course!
1 red onion diced
One pack of vine tomatoes
6 rashers of bacon, chopped
1 pack of sliced saucisson 
Handful of black olives
Tsp garlic granules
2 tablespoons tomato purée
2 handfuls frozen basil
Handful of pine nuts, roasted
Parmesan to dress

1. Sweat down onions and garlic granules until soft

2. Add the bacon until cooked

3. Add in the chopped tomatoes and black olives

4. Add in the pieces of saucisson 

5. Add tomato purée and all the frozen basil

6. Add in the spiralised Courgetti 

7. Add the pine nuts 

8. Add Parmesan to taste
